Last night I wanted to make something light and yummy for dinner. Unfortunately, we're nearing the end of the week; so the refrigerator is looking pretty empty. I try to only buy things that I will use during the week. So by planning out meals and sticking to a list, it keeps cost down! To start, I took some chicken out of the freezer, and threw it on the stove.
I am a goat cheese fiend. So yummy. I've recently discovered this crumbled goat cheese and cranberry item in the 'fancy cheese' section of my grocer.
After the chicken breast was done, I sliced it and placed it onto a bed of spinach and goat cheese/cranberry crumble. To finish, pomegranate dressing. Hubbles recently turned me onto this and the flavor is awesome.
And voila! A quick, light and yummy dinner!
