Goat Cheese and Cranberry Pears
Sliced pears, topped with goat cheese and dried cranberries (chopped pistachios are a great addition as well).
Tuna Salad in Romaine Leaves
Tuna salad spooned into whole hearts of romaine.
Shrimp, Avocado and Tomato Salad
Diced tomato, avocado, red onion and shrimp. Tossed in olive oil, cilantro, lime juice, garlic and a pinch of salt.
So easy, few ingredients and very quick (not to mention healthy and delicious)! Definitely my favorite kind of cooking!
