I have had a bag of tilapia fillets in my freezer for quite a few months. In an effort to create space, I've ventured on a cooking quest - to use up everything in my freezer. And the tilapia fillets were the first to go!
First, I had to thaw them. I cut them from their vacuum sealed bags, put them in a ziploc bag and submerged them in luke warm water. Then preheated the oven to 375 degrees. After they thawed, I dried them with paper towel and put them on a foil lined baking sheet (sprayed with olive oil).
I melted 2 tsp smart balance butter, then added 1.5 tsp lemon juice and 1.5 tsp garlic and stirred it all up. I brushed the mixture onto the fillets and sprinkled some onion flakes and a dash of sea salt. Finally, I took 2 leaves of basil from my lovely basil plant, cut them up and added them to the fillets.
After cooking for 30 minutes…here's how they turned out! They were very yummy and were Hubbles approved.
